
Baked Oatmeal with Dates & Fruits
Baked oatmeal is delicious for breakfast or as a snack bar when cooled. Baking oatmeal results in a spongy texture, much like bread pudding. It's easy to make and customize with your favorite fruit and spices.
Ingredients
- 200 Grams Old-fashioned rolled oats
- 420 Grams Nondairy milk
- 200 Grams Banana
- 200 Grams Frozen Blueberries
- 100 Grams of pitted dates
- 1 1/2 Tsp Cinnamon
- 1/2 Tsp Ground nutmeg
Instructions
- Lightly blend all ingredients except the oats and blueberries in blender.
- Mix all ingredients together in a medium bowl.
- Spread evenly into an 8×8-inch baking dish.
- Bake at 375F uncovered for 30 minutes until lightly browned.
- To serve for breakfast, spoon into bowls with a little nondairy milk. To serve as snack, allow to cool completely before cutting into squares.
